Ahlberg Family Waffle Recipe
Ingredients:
2 ½ cups flour
½ cup corn meal
1 tbsp baking powder
1 tsp baking soda
1 tsp salt
¾ cup oil
2 ½ cups buttermilk (add more if needed)
3 eggs (whites and yolks separated)
Instructions:
Prepare the Dry Ingredients: In a large bowl, mix together the flour, corn meal, baking powder, baking soda, and salt.
Prepare the Wet Ingredients: In a separate bowl, mix the oil, buttermilk, and egg YOLKS ONLY.
Combine Ingredients: Pour the wet ingredients into the dry ingredients. Mix with a spoon until just moistened. Add more buttermilk if the batter is too dry.
Prepare the Egg Whites: Beat the 3 egg whites until they form stiff peaks.
Fold in Egg Whites: Gently fold the beaten egg whites into the batter until nearly fully combined. It’s best if there are still some white streaks visible.
Cook the Waffles: Preheat your waffle iron. Pour the batter into the preheated waffle iron and cook according to the manufacturer’s instructions until golden brown and crisp.

Variations on the waffle recipe
You can use the above recipe as a base and add in other things to make it your own!
Add mix-ins into the batter: Fold in 1 cup of your favorite mix in (ex., blueberries, chocolate chips, or nuts) when folding in the egg whites, then continue the base recipe as written.
Red velvet batter: Add 3 tbsp granulated sugar and 2 tbsp cocoa powder to the dry ingredients and add 1 tsp vanilla extract, and 1 tbsp red food coloring to the wet ingredients, the follow the base recipe as written.
Try these topped with a cream cheese glaze!
Chocolate batter: Add ½ cup cocoa powder, 1/3 cup granulated sugar, and 1 tsp espresso powder (optional) to the dry ingredients of the base recipe. Follow the remainder of the recipe as written.
Try these topped with chocolate syrup, whipped cream, and sliced strawberries!
Whole grain: Swap the all-purpose flour for whole wheat flour. Keep in mind that whole wheat flour absorbs more liquid than all purpose, so you may need more buttermilk! Too dry? Try using ½ whole wheat and ½ all purpose flour (so 1 ¼ cup of each).

Butter and Maple Syrup Waffle: You can’t go wrong with this classic combo! But make sure you are getting real maple syrup; it makes all the difference!
Smores Waffle: Mix 1 cup of chocolate chips into the batter before cooking and/or add chocolate chips on top, spread marshmallow fluff on top, and finish with chocolate syrup!
The Elvis Waffle: Spread with peanut butter and top with banana slices, a drizzle of honey, and chopped bacon (optional).
Cereal Crusted Ice Cream Waffle: Put a large scoop of vanilla ice cream on top of the waffle, then press your favorite cereal onto the ice cream to make a beautiful and delicious treat!

Banana Split Waffle: Do it up big! Put a whole banana split sundae on top of your waffle. Put one scoop of vanilla ice cream, one scoop of chocolate ice cream, and one scoop of strawberry ice cream on top of your waffle all in a row. Peel a banana and split it down the middle lengthwise, then put half on either side of the row of ice cream. Top the vanilla ice cream with crushed pineapple or pineapple sauce. Top the chocolate ice cream with chocolate sauce. Top the strawberry ice cream with fresh sliced strawberries or strawberry sauce. Put a dollop of whipped cream and a maraschino cherry on top of each scoop of ice cream, then garnish with chopped peanuts.

Pecan Pie Waffle: Mix 3 tbsp butter, 1 tbsp maple syrup, 1 tbsp brown sugar, and ¼ cup chopped pecans. Spread the mixture on top of your waffle.
Bacon Pecan Waffle: Top with chopped bacon and pecans and your choice of syrup, I would recommend maple!
PB&J on a Waffle: Spread peanut butter and jelly on top of a waffle, top with another waffle to make it a full sandwich!
Lox on a Waffle: Reimagine the classic bagel with lox on a waffle – top your waffle with cream cheese, smoked salmon, sliced red onion, sliced tomato, and capers. Finish with a bit of fresh dill.
Eggs Benny on a Waffle: Top your waffle with Canadian bacon, a poached egg, and hollandaise sauce. Or try a variation: replace the Canadian bacon with smoked salmon, a crab cake, bacon, sausage, a tomato slice… the options are endless!
